Sassy Chicken Burritos

- 1 pound boneless skinless chicken breasts, cubed
- 1-1/2 tablespoons taco seasoning
- 2 tablespoons canola oil, divided
- 1 small onion, minced
- 1 small green bell pepper, julienned
- 1 small red bell pepper, julienned
- 1/2 cup salsa
- 2 tablespoons lime juice
- 6 tortillas
- shredded Mexican cheese
- crema (optional; see other recipe)
- Heat 1 tablespoon oil in a skillet, then add chicken and stir to coat. Sprinkle seasoning over chicken, stirring to coat. Cook chicken for 4-5 minutes, then flip cubes and cook for another 4-5 minutes. Remove chicken and keep warm.
- Saute onion and peppers in remaining oil until crisp-tender; stir in salsa and lime juice. Spoon mixture over chicken.
