Roasted Asparagus with Lemon & Goat Cheese

- Vegetable cooking spray
- 2 lb. asparagus
- 1 tbsp. olive oil
- Freshly ground black pepper
- ½ c. Swanson® Vegetable Broth
- 3 oz. soft goat cheese
- 1 tbsp. lemon juice
- 1 tsp. grated lemon peel
- Heat the oven to 425°F. Spray a 17 x 11-inch roasting pan or shallow baking sheet with the cooking spray.
- Stir the asparagus and oil in the pan. Season with the black pepper. Pour in the broth.
- Roast the asparagus for 20 minutes or until it's tender, stirring once during cooking. Top with the cheese, lemon juice and lemon peel.
