Raspberry Filled Almond Snowball Cookies

- 1 cup unsalted butter, softened
- 1/2 cup powdered sugar
- 1 teaspoon almond extract
- 2 cups all-purpose flour
- 1/2 teaspoon salt
- 1/2 cup almond flour (or finely ground almonds)
- 1/3 cup raspberry preserves
- 1 cup powdered sugar (for rolling)
