Ramen Soup Dumplings
- 100g red miso
- 8 cloves roast garlic, minced
- 70g honey
- 50g sake
- 30g pork fat
- 1 Tbsp soy sauce
- 500ml water
- 9g instant use gelatin
- (use about 1/2 of the mixture for filling, store rest in fridge)
- 200g all purpose flour
- 2g salt
- 100ml boiling water
- starch for dusting
- 150g pork
- 2 stalks spring onions, minced
- 1 thumb of ginger, grated
- 1 tsp salt
- 1 tsp sugar
- a few pinches of white pepper
- 1 Tbsp Doubanjiang (can be subbed with Sriracha)
- 5 large leafs Chinese cabbage, minced and salted
