Pan-Seared Fish with Garlic and Rosemary

- 1 1/2 tablespoons olive oil
- 3 large garlic cloves, thinly sliced
- 4 rosemary sprigs
- 4 (6-ounce) flounder fillets
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 1/4 teaspoon paprika
- Lemon wedges (optional)
- Heat oil in a large nonstick skillet over medium heat. Add garlic and rosemary. Cook 3 minutes or until garlic is browned and rosemary is crisp. Using a slotted spoon, transfer garlic and rosemary to paper towels, reservlng oil in pan.
- Return oil to medium-high heat. Sprinkle fish evenly with salt, pepper, and paprika. Cook fish in hot oil 3 minutes on each side or until desired degree of doneness. Divide fish evenly among 4 plates. Top with reserved garlic and rosemary. Serve with lemon wedges, if desired.
