Miso Fish

- 1 cup white miso paste
- 1/2 cup mirin
- 2 Tbsp brown sugar
- 4 fish fillets (6 oz each)
- Steamed rice
- Combine the miso, mirin, and brown sugar in a bowl. Stir to thoroughly combine. Pour the marinade over the fish and marinate in the fridge for up to 12 hours.
- Preheat the broiler.
- Remove the fish from the marinade and place on a baking sheet. Set the baking sheet 6" below the broiler and cook for 8 to 10 minutes, until the fish is deeply carametized and flakes with gentle pressure.
