Mexican Chorizo Meatballs

- 1 egg, beaten
- 1 pound ground beef or turkey
- 1 pound Mexican pork chorizo
- 1/2 cup cotija cheese
- 1/2 cup bread crumbs
- 1/4 cup diced onion
- 4 tablespoons chopped garlic
- 1/4 lb Monterrey Jack cheese, cut into 1 in cubes
- Preheat the oven to 425.
- Mix together egg, beef or turkey, chorizo, onion, garlic, cotija, and breadcrumbs. Hand form into a partial ball and stuff with a cube of jack, then form the meatball. Place meatballs on a baking sheet.
- Bake the meatballs for 15 minutes.
