Lazy Ice Cream Sandwich Cake
Tags: Dessert
Yield: 16
- 12 Vanilla Ice Cream Sandwiches (or your favorite flavor)
- 8 oz container of whipped topping (like Cool Whip)
- ½ of a (15 oz) bottle hot Fudge ice cream topping, warmed up for easy spreading if needed
- ½ of a (15 oz) jar Caramel ice cream topping, warmed up for easy spreading if needed
- handful of roasted salted peanuts, optional
- Line the bottom of an 8×8 pan with a double cover of cling wrap. Make sure the plastic hangs over the edges of the pan. This will make it easier to transfer the frozen cake to a serving platter.
- Neatly arrange a layer of about 6 sandwiches on top. Spread half of the whipped cream on top and then pour or drizzle all over a thin layer of caramel and fudge sauce (about 4 tablespoons each or to taste). Alternatively, spread the fudge sauce on the sandwiches first then top with whipped cream and the caramel sauce.
- Layer the remaining sandwiches on top and then spread the whipped cream over. Make alternate lines of caramel and fudge sauce. Gently drag a toothpick in alternating directions to create the design. Freeze until needed. Once frozen, you can serve this as is or if you wish to be more indulgent, sprinkle some roasted and salted peanuts and drizzle with a little more caramel and fudge sauce on top just before serving. Enjoy!
- Instead of hot fudge sauce, you can also use chocolate-flavored sauce or use both interchangeably.
