Korean Meatballs

- 1 lb ground chicken
 - 1 lb ground pork
 - 2 eggs
 - 4 garlic cloves, minced
 - 2 tsp ground ginger
 - 1 1/2 tsp red pepper flakes
 - 1 tbsp sesame oil
 - 1 tsp salt
 - 1 cup panko crumbs
 - 1 cup Korean BBQ Sauce
 - 2 tbsp olive oil
 
- Combine all the ingredients (except for the panko crumbs and Korean BBQ sauce) and mix together.
 - Sprinkle the panko crumbs over the meat mixture, mix and let the panko soak into the meat mixture for 5 minutes.
 - Form into 20 balls. Heat a large skillet over medium-high heat. Add the olive oil to the pan and allow to come to a shimmer. Add the meatballs to the pan.
 - Cook the meatballs until browned on the top and bottom, about 5 minutes per side. You may need to cook the meatballs in two batches.
 - Serve the meatballs over quinoa. Drizzle the Korean BBQ sauce over the meatballs.
