Jerk Chicken Nachos

  1. Preheat oven to 425. Heat a skillet over medium-high heat.
  2. Arrange tortilla chips in a slightly overlapping layer on a large baking sheet.
  3. Add oil to skillet and swirl to coat. Add chicken to skillet and stir to coat with oil.
  4. Sprinkle 1 tbsp of jerk seasoning over chicken and stir to coat evenly. Cook chicken until golden, about 10 minutes.
  5. Sprinkle chicken and cheese evenly over tortilla chips. Bake 5-7 minutes or until cheese is melted.
  6. Meanwhile, in a small bowl, mix the lime juice with the bell pepper and the other 1 tbsp of Jamaican Jerk seasoning. Mix well.
  7. Spoon bell pepper mixture over nachos. If desired, combine sour cream and additional Jerk seasoning in a zip-lock bag. Trim corner and pipe sour cream mixture over nachos.
