Jerk Chicken Nachos

- 6 cups tortilla chips
- 1 tbsp olive oil
- 1 1/4 lbs chicken breasts, cubed
- 2 tbsp Jamaican Jerk seasoning, divided
- 2 cups shredded Mexican cheese blend
- 1/2 cup yellow or red bell peppers (sliced)
- 1/4 cup sour cream
- 1 tsp Jamaican Jerk seasoning
- Preheat oven to 425. Heat a skillet over medium-high heat.
- Arrange tortilla chips in a slightly overlapping layer on a large baking sheet.
- Add oil to skillet and swirl to coat. Add chicken to skillet and stir to coat with oil.
- Sprinkle 1 tbsp of jerk seasoning over chicken and stir to coat evenly. Cook chicken until golden, about 10 minutes.
- Sprinkle chicken and cheese evenly over tortilla chips. Bake 5-7 minutes or until cheese is melted.
- Meanwhile, in a small bowl, mix the lime juice with the bell pepper and the other 1 tbsp of Jamaican Jerk seasoning. Mix well.
- Spoon bell pepper mixture over nachos. If desired, combine sour cream and additional Jerk seasoning in a zip-lock bag. Trim corner and pipe sour cream mixture over nachos.
