Steps
  1. Preheat oven to 400.
  2. Mix potato flakes, butter, half & half, and water in a 2.5 quart casserole dish. Microwave on high in 1-minute intervals until butter is melted. Stir well.
  3. Stir in the mozzarella and 1 cup of the parmesan.
  4. Mix the bread crumbs with the remaining parmesan and sprinkle over the potatoes.
  5. Bake for 15 minutes.
