Italian Mashed Potatoes

- 4 cups potato flakes
- 1 stick butter
- 2 cups half & half
- 2 cups water
- 1 1/2 cups shredded mozzarella cheese
- 1 1/4 cups grated parmesan cheese, divided
- 1/4 cup Italian-seasoned bread crumbs
- Preheat oven to 400.
- Mix potato flakes, butter, half & half, and water in a 2.5 quart casserole dish. Microwave on high in 1-minute intervals until butter is melted. Stir well.
- Stir in the mozzarella and 1 cup of the parmesan.
- Mix the bread crumbs with the remaining parmesan and sprinkle over the potatoes.
- Bake for 15 minutes.
- This might be improved by some garlic powder.
