Healthy Cheeseburger Soup

- ½ pound Ground Beef
- ¾ cup Onion (Chopped)
- ¾ cup Carrots (Shredded)
- ¾ cup Celery (Diced)
- 1 tsp Basil (Dried flakes)
- 1 tsp Parsley (Dried Flakes)
- 4 tbsp Butter (Divided)
- 3 cups Chicken Broth
- 4 cups Potatoes (Peeled and diced)
- ¼ cup Flour (All purpose)
- 2 cups American/Cheddar Cheese (Cubed or shredded)
- 1½ cups Milk
- ¾ tsp Salt
- ¼ tsp Pepper
- ¼ cup Sour Cream
- In a large skillet, brown the ground beef. Make sure to drain and set aside for later.
- In a saucepan, add 1 tbsp of butter and let it melt. Add onion, celery, shredded carrots. Then add some parsley and basil flakes. Saute until tender.
- Add the broth to the saucepan along with potatoes and beef. Bring to a boil.
- When bubbling, reduce heat. Then, cover and simmer for 10-12 minutes. Try a piece of potato and make sure it is tender.
- Melt 3 tbsp of butter in a small skillet and add the flour. Cook and stir for 2-3 minutes or until bubbly.
- Add it to the soup and bring to a boil once again. Cook and stir for 2-3 minutes. After that, reduce heat to low.
- Add the cheese, milk, salt, and pepper. Cook and stir for 2-3 minutes or until cheese melts.
- Remove from heat and blend in sour cream.
