Hamburg Steak

- 1 lb ground beef
- 1 lb ground pork
- 1 onion, chopped and cooked with a little oil until softened
- 1 cup breadcrumbs
- 1/4 cup milk
- 2 eggs, lightly beaten
- 2 tsp ground nutmeg
- Sandwich Sprinkle to taste
- oil for cooking
- pickled ginger to serve
- 1/2 cup dry red wine
- 1/2 cup tomato ketchup
- 1/2 cup tonkatsu sauce
- 1/3 cup beef or chicken stock
- Place all ingredients for the patties in a large bowl and mix well. Divide mixture into 10 equal portions before turning them into neat patties.
- Fry patties with a little oil until golden on both sides (3 minutes/side) then cover the pan and reduce the heat to the lowest and cook for a further 10 minutes.
- For the sauce, place the soup stock, red wine, tomato ketchup, and tonkatsu sauce in the pan and cook until thickened and syrupy.
