Garlic and Ponzu Roasted Potatoes

- 2 pounds red skinned potatoes
- 1 1/2 tablespoons peanut or vegetable oil
- 1/2 tablespoon sesame oil
- 1 1/2 tablespoons chili ponzu
- 4 cloves garlic, minced
- Preheat the oven to 425 degrees F.
- Half or quarter the potatoes and add in a big bowl with the vegetable oil, sesame oil, ponzu, and garlic; toss until the potatoes are well and evenly coated.
- Transfer the potatoes to a baking sheet and spread out evenly into 1 layer.
- Roast for about 20 minutes or until browned and crisp.
- Turn twice during baking.
- Remove from the oven and transfer to serving dish.
- Season with more ponzu or soy sauce if needed.
- Serve warm or cold.
