  1. To prepare pork, combine first 5 ingredients. Rub cumin mixture over pork. Heat oil in a skillet over medium-high heat. Add pork, and cook 4 minutes until browned on all sides. Reduce heat to low, cover and cook 15 minutes or until a thermometer registers 155°, turning occasionally. Remove pan from heat, remove pork from pan, reserving drippings in pan. Let pork stand 3 minutes. Cut pork across grain into 1/4-inch-thick slices. Return pork slices and meat juices to drippings in pan, stirring to coat pork.
  2. Serve with pico and crema.
