Yield: 4
- 1 tsp ground cumin
- 1/2 tsp cumin seeds
- 1/2 tsp paprika
- 1/4 tsp salt
- 1/8 tsp black pepper
- 1 lb pork tenderloin, trimmed and cut in half crosswise
- 1 tsp olive oil
- taco rice
- 1 cup sour cream
- taco sauce
- To prepare pork, combine first 5 ingredients. Rub cumin mixture over pork. Heat oil in a skillet over medium-high heat. Add pork, and cook 4 minutes until browned on all sides. Reduce heat to low, cover and cook 15 minutes or until a thermometer registers 155°, turning occasionally. Remove pan from heat, remove pork from pan, reserving drippings in pan. Let pork stand 3 minutes. Cut pork across grain into 1/4-inch-thick slices. Return pork slices and meat juices to drippings in pan, stirring to coat pork.
- Serve with pico and crema.
