Chorizo Shepherd's Pie

  1. Preheat oven to 350.
  2. Heat a large skillet over medium high heat. When hot, add the onion, garlic, ground beef and chorizo.
  3. When the meat is cooked through (about 5 minutes), add the corn. Stir to incorporate, simmer for 1 minute, then remove from heat.
  4. Drain the meat mixture on paper towels.
  5. Spread the meat mixture to cover the bottom of a casserole dish.
  6. Prepare the potato flakes according to package directions, stirring in the cotija at the end.
  7. Spread the goat cheese across the top of the meat mixture.
  8. Scoop the mashed potatoes in large scoops across the top of the goat cheese. Gently spread the potatoes evenly across the surface of the dish.
  9. Using a fork, create little peaks throughout the potatoes. The tips of these peaks will brown during cooking.
  10. Bake at 350 for 20 minutes, then place under broiler for 3 to 4 minutes until tips are brown.
