Chorizo and Goat Cheese Quesadillas

- 1 lb chorizo (a mixture of beef and pork chorizo is best)
- 8 oz goat cheese
- 4 flour tortillas
- tortilla chips
- queso
- guacamole
- Heat a skillet over medium high heat.
- Brown chorizo until done, then drain.
- While chorizo is cooking, heat a second skillet over medium high heat. Spread one half of each tortilla with goat cheese.
- After the chorizo has been drained, spoon it over the cheese on each tortilla, then fold the empty half over.
- Add quesadillas to the second skillet two at a time. Cook each side until the desired level of crispiness, then repeat with the remaining quesadillas.
