Chorizo and Goat Cheese Quesadillas

  1. Heat a skillet over medium high heat.
  2. Brown chorizo until done, then drain.
  3. While chorizo is cooking, heat a second skillet over medium high heat. Spread one half of each tortilla with goat cheese.
  4. After the chorizo has been drained, spoon it over the cheese on each tortilla, then fold the empty half over.
  5. Add quesadillas to the second skillet two at a time. Cook each side until the desired level of crispiness, then repeat with the remaining quesadillas.
