Chipotle Orange Chicken and Rice

- 3 tablespoons orange marmalade
- 4-1/2 teaspoons chopped chipotle peppers in adobo sauce
- 3 garlic cloves, minced
- 1/2 teaspoon salt
- 1/2 teaspoon ground cumin
- 1-1/2 lbs chicken breasts, cubed
- 1 tablespoon vegetable oil
- 1 teaspoon onion powder
- 2 cups cooked brown rice
- Heat oil in a skillet over medium-high heat.
- Toss chicken in oil and onion powder. Cook chicken until golden, about 10 minutes, flipping once while cooking. Remove chicken from skillet.
- Add garlic to skillet and let cook for about 1 minute.
- Add marmalade, peppers, salt, and cumin to the skillet, stirring to combine. Let cook for 2 or 3 minutes until sauce is at desired thickness, then stir in chicken.
- Serve chicken over rice.
