Cheesy Ham Pot Pie

  1. Preheat oven to 400 degrees.
  2. Melt the butter in a large pot over medium heat.
  3. Whisk in the flour and cook for 30 - 60 seconds.
  4. Add the milk and the chicken broth.
  5. Whisk in the cheese sauce mix from box of potatoes.
  6. Stir in the julienne potatoes.
  7. Cook over medium heat for 6-8 minutes, stirring often, until thickened.
  8. Stir in the ham and the frozen veggies.
  9. Spread the mixture in a greased 9×13 pan.
  10. Cover with pie crust.
  11. Poke holes in the crust and bake at 400 degrees for 40-45 minutes, until golden.
  12. (If you want a more golden crust, you can brush it with an egg wash.)
