Caribbean Citrus Chicken

- 1.25 lbs chicken breasts, cubed
- 1 Tbsp olive oil
- 1 Tbsp Mrs. Dash chili lime seasoning
- 3 cloves garlic, minced
- 1/2 pineapple, cut into 1/2 in pieces
- Zatarain's Caribbean Rice Mix
- 1 orange, cut into 1/2 in pieces
- Prepare rice as directed on package.
- Heat a large skillet over medium-high heat.
- Add oil and chicken. Stir to coat. Sprinkle chili lime seasoning over chicken and add garlic, stirring to distribute evenly. Cook chicken for approximately 10 minutes (until chicken is nearly done), stirring to evenly cook chicken.
- Add the pineapple and stir. Cook for at least 2 minutes to allow chicken to become golden and pineapple to cook a bit.
- Stir orange and rice into skillet and serve.
