Caribbean Citrus Chicken

- 1.25 lbs chicken breasts, cubed
- 1 Tbsp olive oil
- 1 Tbsp chili lime seasoning
- 3 cloves garlic, minced
- 1 orange, cut into 1/2 in pieces
- 1 tbsp butter
- 1 cup long grain white rice
- 2 cups water
- 1-1/2 tablespoons dried chopped bell pepper
- 1/4 cup crushed pineapple
- 1/4 cup coconut flakes (unsweetened)
- 1 tbsp sugar
- 1/2 tsp chicken bouillon
- 1 tsp soy sauce
- 1/2 tsp onion powder
- 1/2 tsp garlic powder
- 1/4 tsp turmeric
- 1/4 tsp annatto powder
- 1/4 tsp cayenne pepper
- 1/4 tsp black pepper
- Place butter at the bottom of a rice cooker add all of the remaining rice ingredients and stir until combined. Turn on rice cooker on the white rice setting.
- Heat a large skillet over medium-high heat.
- Add oil and chicken. Stir to coat. Sprinkle chili lime seasoning over chicken and add garlic, stirring to distribute evenly. Cook chicken for approximately 10 minutes (until chicken is golden brown), stirring to evenly cook chicken.
- Stir orange and rice into skillet and serve.
