Caribbean-Style Pork

- 2 lb boneless center-cut pork loin roast, cut into 1-inch pieces
- 1 tsp olive oil
- Cooking spray
- 2 tbsp hoisin sauce
- 1 tbsp lower-sodium soy sauce
- 1 tbsp lime juice
- 2 tbsp creamy peanut butter
- 1 tsp cumin
- 1/2 tsp salt
- 1/4 tsp cayenne pepper
- 2 cloves garlic, minced
- 4 1/2 cups hot cooked rice
- Combine hoisin sauce and next 7 ingredients (through garlic) in a small bowl; stir until well blended.
- Heat a large nonstick skillet over medium heat. Add oil to pan; swirl to coat. Add pork; saute about 10-15 minutes until well browned.
- Pour sauce mixture over pork; stir well. Cook 1-2 minutes more to heat sauce through.
- Serve over rice.
