Caldo de Tomate Polenta

- 3/4 cups instant polenta
- 1 tablespoon butter
- 2 cups chicken broth
- 1 tablespoon caldo de tomate
- 1/2 cup cotija cheese
- Add chicken broth, butter, and caldo de tomate to a medium saucepan.
- Bring broth mixture to a simmer. Add polenta and stir until thick (about 4 minutes). Stir in cotija and continue to stir for another minute.
