Beef and Pineapple Stir Fry

- 2 tbsp lemon juice
- 1 tbsp low-sodium soy sauce
- 1 tbsp mirin
- 2 tsp cornstarch
- 1 lb round steak, cut into thin strips
- 3 cups cubed pineapple
- 2 tsp dried ginger
- 1/2 tsp sesame seeds
- 1/2 tsp Mrs. Dash extra-spicy seasoning
- 2 tbsp water
- Combine the Marinade ingredients in a large bowl. Add the beef strips, toss to coat, and marinate in the refrigerator for 1 hour.
- Lightly coat a nonstick wok or frying pan with cooking spray and place over high heat. Add the beef along with the marinade, and stir-fry the beef until no pink remains (about 1 minute).
- Reduce heat to medium and add pineapple and ginger, and saute until heated through.
- Add the sesame seeds, Mrs. Dash, and 2 tbsp of water. Mix all the ingredients together well and cook another 2 minutes.
- Serve hot over a bed of rice.
- Try equal parts Fajita and Chili Con Carne from Penzey's in place of the Mrs. Dash. This might require some additional citrus, or might not. (The Mrs. Dash has citric acid, orange peel, and lemon oil, and these other blends do not.) The mix might need tuning, but that's a good place to start.
